BAKE: Matcha Rice Krispies Treats with White Chocolate Chips & Brown Butter

These matcha rice krispie treats have a complex flavor from nutty brown butter and bright green matcha green tea. The slight bitterness of the green tea powder is offset by the sweet and creamy white chocolate chips and a hint of real vanilla. Add colorful sprinkles for an even more fun and festive dessert!

These are great for afternoon snacking (with a little extra pick-me-up from the tea) or a sweet breakfast treat. If you really love matcha, pair them with a tall frosty glass of iced matcha latte (make your own with our homemade matcha latte concentrate recipe) or a freshly brewed cup of hot green tea.

And while there’s nothing Irish about them, these green rice krispie treats are also fun for St. Patrick’s day when you want something different for a green-themed party menu!

Matcha Rice Krispie Treat Ingredients

marshmallows:

I like to use mini-marshmallows for these rice krispies, as they’re smaller and easier to melt and mix uniformly into the cereal.

You can substitute an equal weight of regular or jumbo marshmallows if that’s what you have on hand. You can chop them up, or use them as is.

crisp rice cereal:

Use fresh, crispy puffed rice cereal. You’ll need about 6 cups.

butter:

Use unsalted butter, or you may want to omit the pinch of salt in this recipe. We’re going to lightly brown the butter instead of just melting it.

The milk proteins in the butter toast and add a delicious depth and complexity to the flavor. The butter will foam a bit as it browns. Keep a close eye on it, as it can burn easily after it browns!

other ingredients:

Real vanilla extract, salt, and culinary-grade matcha powder. You can use a few drops of green food coloring to make these a more vibrant green if you’d like.

Kitchen Equipment Needed

medium saucepan:

You’ll want a one to two quart saucepan to melt the butter and marshmallows together for this matcha rice krispie recipe.

You can also use a large Pyrex glass bowl or heat-resistant plastic to carefully microwave them if you prefer.

mixing bowl:

You’ll want a medium-large mixing bowl to combine the melted marshmallow mixture with the crisp rice cereal. Make sure it is large enough to hold all of your ingredients, plus extra room to mix them together without spilling.

square baking dish:

For extra-thick and chewy rice crispy treats, use an 8″x8″ square pan. For medium-thick bars, use a 9″x9″ pan. If you prefer very thin rice krispie bars, you can use a bigger pan.

Butter the pan well and dust it with matcha powder. Alternately, you can use a square or rectangle of parchment cut to fit the pan so that the bars are easy to remove and slice.

How to Make Brown Butter Matcha Rice Krispies

prepare the pan:

  • Butter a 9″x9″ baking dish for thick rice krispie treats, or a larger pan for thin ones.
  • You can dust the buttered pan with a teaspoon of matcha in a sifter for a stronger green tea flavor.

add cereal to bowl:

  • Measure the rice krispie cereal out into a large mixing bowl, and have the white chocolate chips measured and ready but do not mix them in.

brown butter:

  • Melt butter in a medium saucepan over medium low heat, until the milk protein particles in the butter begin to turn light brown. It will smell lightly toasted, like hazelnuts, and look foamy.
  • Remove quickly from the heat before the butter can burn. Swirl the melting butter in the pan.

add matcha & marshmallows:

  • Sift the matcha powder over the browned butter in the pan.
  • Whisk in the matcha powder, salt (if you used unsalted butter), vanilla extract, and optional food coloring.
  • Stir quickly until there are no lumps of matcha, and then add the marshmallows.
  • Return the pot to the stove over low heat, stirring until the marshmallows are soft and melting.

combine marshmallow mixture with cereal:

  • Using a heat-resistant spatula, pour the matcha marshmallow mixture into the bowl of crisp rice cereal.
  • Working quickly, fold in the cereal until it is evenly distributed but not completely cooled.

fold in white chocolate & shape bars:

  • Fold in the white chocolate chips and optional sprinkles, and pour the mixture into the prepared pan.
  • Press the matcha rice krispie mixture gently into an even layer.
  • Garnish with decorative sprinkles and more white chocolate chips if you like while the treats are still warm, and score cut-lines into the surface.

Storage & Make-Ahead Tips

Let the matcha rice krispies treats cool completely and cut with a serrated knife into portions. Transfer to an airtight container. These are best in the first few days, but will last for a week or more. You can also freeze them for longer storage.
