COOK: Heirloom Tomato Burrata Caprese Salad

This burrata caprese salad is a twist on a classic caprese salad, and is a fantastic way to showcase the best of summer’s ripe and flavorful tomatoes from your garden, CSA, or farmer’s market.

Instead of slices of fresh mozzarella cheese, each of these summer salads has a ball of rich and creamy burrata cheese, along with fresh herbs and just the simplest of seasoning to let the flavors of the ingredients shine.

Burrata Caprese Salad Ingredients

This burrata caprese is a simple salad and relies on using quality ingredients. Use vine-ripened heirloom tomatoes for the best results… these are Black Krim tomatoes from our garden, which are my favorite slicing tomatoes.

This salad is especially beautiful with an assortment of colorful heirlooms. Try alternating slices of Green Zebra, yellow and deep red beefheart-type tomatoes. Accents of halved sweet cherry tomatoes are also delicious sprinkled on the plate.

This is definitely not a winter recipe, but rather, one to save for those glorious weeks when your garden or farm fresh tomatoes are at their peak of flavor.

Burrata Cheese:

This fresh cheese is like mozzarella’s luxe cousin. Burrata cheese is a ball of fresh, stretchy mozzarella enfolding straciatella cheese, which is a mixture of fresh mozzarella mixed with rich cream.

Fresh Herbs:

No caprese salad is complete without fresh, fragrant and spicy basil. If you like, you can add a few leaves of fresh parsley or microgreens.

Seasoning:

This salad is seasoned very simply, so that the fresh flavors of the heirloom tomatoes and fresh herbs can shine through. All it needs is a bit of freshly ground black pepper & Maldon flaky sea salt.

You can use a sprinkle of oregano or Italian seasoning blend if you like, but use a light touch so that you don’t overwhelm the main ingredients.

How to Make Burrata Caprese Salad

one: prep ingredients

  • Wash, gently dry, and slice your heirloom tomatoes.
  • Rinse your fresh herbs & pat them dry with a clean lint-free tea towel or spin them in a salad spinner.

two: compose salads

  • Arrange the tomato slices on your plates or a large platter around the balls of burrata cheese.
  • Tuck fresh basil leaves between the tomato slices.
  • Optional – top the plates with microgreens or snipped parsley leaves.

three: season caprese salads

  • Season with fresh ground black pepper & flaky salt and if you like, a sprinkle of good quality dried or fresh oregano leaves.
  • Drizzle the platter or individual salads lightly with extra virgin olive oil. Don’t drown your salads, just a teaspoon or two per plate is plenty.

Storage & Serving Ideas

This salad is best when made with garden-warm tomatoes, and assembled just before serving. When vine-ripened tomatoes are refrigerated, their texture gets mealy.

You probably won’t have any leftovers, but if you do, keep them chilled, as the cheese is quite perishable, although the flavor and texture are best when closer to room temperature.

Ingredients
  

  • 3 large heirloom tomatoes (heirloom tomatoes vary in size, use more small tomatoes if needed)
  • 4 balls burrata cheese
  • ½ cup fresh basil leaves
  • 2 tbsp extra virgin olive oil
  • ¾ tsp flaky sea salt (Maldon etc)
  • ½ tsp freshly ground black pepper
  • ½ tsp dried oregano leaves (optional)
  • 1 tbsp parsley or microgreens (optional)

Instructions
 

  • Wash and slice the fresh tomatoes into half-moon slices. Arrange the slices around the edges of salad plates or a serving platter.
  • Center a burrata cheese ball on each plate and add the basil leaves, tucking them between tomato slices.
  • Drizzle each plate with olive oil, and sprinkle the cheese and tomatoes with the seasonings.
  • Serve immediately.
